Description
This is a shrubby herbaceous plant that, when mature, reaches a height of 2 to 4 meters depending on its growing conditions. Its deciduous foliage consists of lanceolate green leaves. Its flowers are relatively large, reaching up to 8 cm in diameter. Guinea sorrel leaves are used in the Democratic Republic of Congo (Kinshasa), the Republic of Congo (Brazzaville), and Gabon as a vegetable, either mashed or in a sauce. Peanut butter or mashed eggplant can be added to reduce the acidity of the sauce or purée, and it pairs perfectly with grilled fish or poultry, enhancing their flavor.
